Jalapeño Popper Burgers

Ingredients:

1 lb ground beef

1 small onion, diced

1-2 jalapeños, diced

2 Tbl oil

1 egg

1/4c breadcrumbs

4 oz cream cheese, cut into cubes

Sucklebusters Campfire Steak seasoning

4 slices bacon, cut in half

4 slices Colby jack cheese

4 brioche hamburger buns

 

Sauce:

1c mayo

3/4c bbq sauce

1/2 tsp garlic salt

1/4 tsp pepper

Pinch cayenne pepper

  1. Mix together & set in fridge.

 

Instructions:

  1. In a cast iron skillet, sauté onions & jalapeños in oil til caramelized. Set aside.
  2. Fry bacon in skillet, set aside and discard grease.
  3. Combine onions, peppers, ground beef, egg, breadcrumbs, cream cheese & season to taste. Mix carefully, trying not to split up cream cheese too much.
  4. Smash into 4 balls.
  5. Toast buns in skillet. Set aside.
  6. Cook burger patties in skillet to desired temperature. Season with more Campfire seasoning.
  7. When burgers are almost done, top with cheese & cook til melted.
  8. To assemble, put sauce on buns, then burger, then bacon. Add extra toppings such as lettuce & tomatoes if you want.
