Ingredients:
2 cups white rice
16 oz tomato sauce
16 oz chicken broth
(or water + chicken boullion)
1/2 white onion, minced
1/2 bunch cilantro, minced
1 tsp salt
1 tsp pepper
1 tsp garlic
1 tsp cumin
1 tsp oregano
2 Tbl oil
Instructions:
- In a sauce pot with a lid, sauté onion in oil til translucent.
- Add rice & toast til lightly golden brown.
- Add in tomato sauce and broth, bring to boil.
- Bring temperature to low. Season with remaining ingredients and cover. simmer for 25 minutes.
- Turn off the heat & let sit with the lid on for 5-10 minutes. Fluff with a fork & enjoy!
