Spanish Rice AKA Red Rice

Ingredients:

2 cups white rice

16 oz tomato sauce

16 oz chicken broth

(or water + chicken boullion)

1/2 white onion, minced

1/2 bunch cilantro, minced

1 tsp salt

1 tsp pepper

1 tsp garlic

1 tsp cumin

1 tsp oregano

2 Tbl oil

 

Instructions:

  1. In a sauce pot with a lid, sauté onion in oil til translucent.
  2. Add rice & toast til lightly golden brown.
  3. Add in tomato sauce and broth, bring to boil.
  4. Bring temperature to low. Season with remaining ingredients and cover. simmer for 25 minutes.
  5. Turn off the heat & let sit with the lid on for 5-10 minutes. Fluff with a fork & enjoy!
